Champagne Yprésien by Legrand - Latour is the result of 70% Meunier and 30% Pinot Noir, from vineyards from Verneuil Village, on the slopes of the Vallée de la Marne.

2018 harvest, fermentation and ageing in wood for 11 months and more than 30 months in bottle for this Champagne with a strong territorial identity produced from a marly-clayey subsoil, with fine sand and sandstone. No final dosage (Brut Nature).

The Champagne Éocène by Legrand - Latour comes from the ambitious project "Hyper Territory" of Thibaut, to create Champagne by geological zone. Agronomic part in organic, aging and disgorgement in the bowels of his land alongside the fossils, with a stable climate balance throughout the year.

This Champagne is named from Ypresian, the first of the four levels into which the Eocene is subdivided on the geological time scale, dating from 55 to 48 million years ago and characterised by an initial marine ingression that introduced elements of Mediterranean fauna into the region.

Champagne Yprésien is a Blanc de Noirs of soft extraction, playing on the subtle ripples of the two varieties that are expressed here on the savoury vertical and the marine skeleton of the soil.
