Champagne Vouette & Sorbee is the creation of husband and wife Bertrand & Helene Gautherot. The cuvée Blanc d'Argile comes mainly from a small parcel of Chardonnay in Briaunes supplemented with scattered plantings of Chardonnay in Bertrand’s other lieux-dits. They approach to winemaking is a reminder to remain simple and natural in the cellar: 100% Chardonnay, one harvest, only wild yeast, no chaptalization, 100% vinification in oak, 100% natural malo, no dosage. Mineral, nougat, salty and long –  basically a Grand Cru Chablis with bubbles.
